black bean veggie burger + homemade guacamole topping

In yoga class, one of my favorite teachers opened class with, Let’s talk about tourists. You know how they have the ability to take up a whole block, standing there, gawking at something we’d normally ignore, pass by? And isn’t it your first inclination to say, GET OUT OF MY WAY! Everyone in our class nodded because we’d been through this scenario more times than we’d like to admit, and our teacher joined in the chorus but then added, But here’s the thing. We should be grateful for tourists because they teach you wonder. They teach you to stop and pause on the monuments, buildings, sites of which you’d normally overlook. My teacher continued with this concept throughout class, inviting us to be a tourist of our own bodies, to see and experience it as if we had encountered ourselves for the first time.

I’ve been thinking about this notion of being a tourist because lately my body feels foreign. While it’s true that I’ve felt the best I’ve ever felt, and while it’s true that I’m losing weight and fitting into some of my old clothes (as well as a few new ones), I’ve been battling a chronic daily itch, a very minor, yet irritating, version of the GLUTEN APOX of last month. To be candid, I’m baffled. I’ve been eating a clean, gluten/dairy/yeast-free diet, however, I’ve had the occasional blueberry and lemons in my dressing (two foods I’m supposed to avoid, but do they have the ability to keep me itching THIS LONG?!). And while I’m slowly being accustomed to the fact that I can’t have blueberries, sweet potatoes, millet, bananas, turkey, grapes, cranberries, and a list of other foods for at least six months, I’m struggling with the fact that I may have a sensitivity to something else? Or is this my body’s way of cleaning itself out? I read somewhere online (I KNOW, I KNOW, I’m seeing my nutritionist tonight so I’ll stop playing armchair doctor) that hives can last as long as six weeks, and I pray that these unkind invaders take their leave of absence soon because this consistent itch has certainly made me feel as if I’m a guest in my own body.

On the flip side, I have noticed CHANGES. I have noticed how I FEEL on a mainly plant-based diet. I’ve noticed my glowing, clear skin. I’ve noticed the increased stamina during my workouts. I’ve noticed my energy, how there’s so much of it. I’ve noticed that I haven’t had coffee in a month and I don’t miss it. I’m noticing ME, as if I’m meeting myself for the first time, and here’s me shaking hands with my new self, exchanging pleasantries, and saying aloud, I could get used to this new life.

Most recently, tipped off by a reader (I can’t remember whom!), I purchased the Oh She Glows cookbook, and I couldn’t have been more thrilled. I nearly earmarked every other page because they vegan recipes were simple, attractive, and the ingredients compose most of my pantry. Last night, mid-itch, pre-Benedryl, I fixed up these veggie burgers and they were THE. BEST. OVER. Not mushy, flavorful, spicy, filling and DELICIOUS, not only did these burgers fill me up, but I felt good knowing I had a healthy, protein-packed meal that would sustain me until morning. AND they freeze well, so right now, as I type this, I’m thinking of all the myriad of ways I can use my burgers this week (lettuce wraps, crumbled up in salads + the like).

So here’s me being a tourist who snaps photos of her meal. Enjoy!

INGREDIENTS: Slightly adapted from Oh She Glows
For the veggie burgers
1 can (14 ounces) black beans (about 1 3/4 cups), drained, rinsed and mashed
1 cup carrots, grated
1/3 cup fresh cilantro or parsley leaves
2 large garlic cloves, minced
1/4 cup shallots, diced
1/2 cup sunflower seeds
3/4 cup almond meal
1/2 tbsp. olive oil
1 tbsp. gluten-free tamari (soy) sauce
1 tsp. chilli powder
1 tsp. cumin
1 tsp. oregano
1 large egg, beaten
salt and pepper, to taste

For the guacamole
1 ripe avocado, mashed
2 tbsp chopped cilantro
juice from 1/2 lime
Salt/pepper

DIRECTIONS
Pre-heat the oven to 350F. Line a baking sheet with parchment paper or greased tin foil.

In a large bowl, mash the beans into a paste, leaving a few beans in tact for texture. Stir in the rest of the ingredients. You might think this won’t come together, but it will, trust me. Mix well to combine.

With slightly wet hands, shape the dough into 8 patties. Pack the dough tightly to help it hold together during cooking and place the patties on the prepared baking sheet.

Bake the patties for 15 minutes, gently flip them, and bake for 15-20 minutes more, until the patties are firm and golden. While the patties are baking, make the guacamole.

When your burgers are down, plate on a bed of spinach, and top with the guacamole. Dig in!

  2. Those look fantastic! And everything is better with guacamole.

    I hope you figure out what is causing your itch soon! Do you think it could be something environmental and/or stress related? It doesn’t seem like a few blueberries or a bit of lemon would cause you to itch for more than a day or two, but of course I’m not a doctor.

    • Someone at work asked me if I was stressed, and for the first time ever I said, NO, I’m not actually stressed out. I’m seeing my food coach/nutritionist tonight, so hopefully I’ll get some answers. GRR, because other than the latent itch, I feel GREAT.

  3. These look delicious! I don’t have the myriad of things going on that you do (although I was eaten alive over the weekend by mosquito’s so I get the itching. MY GOD THE ITCHING) but I have been trying to just eat better in general- whole foods, cutting out the processed crap. I keep being told by the internet I need more protein, and here’s Felicia with the answer. Nice!

    • Hey Emily! I used to have carbs at every.single.meal. Pasta used to be the main event and veggies were the back-up dancer, now I really focus on lean proteins, tons of veg, and foods high in amino acids so I can get my combination protein. It’s made a HUGE difference in my energy levels, and I’m actually eating half of what I used to eat and feel fuller and healthier. WHO KNEW?

      I hope you’ve recovered. Bug bites are the WORST.

  • My freelance career is nearing its best-by date. This realization didn’t come from some climactic third act. Instead, it was an acknowledgment of a simple truth: everything expires. The shiny and new loses its sheen and pallor. What once made you bolt out of bed becomes the thing you run from screaming. You tally the things you keep losing, which loom large and incalculable. You’re bombarded by seemingly motivational Instagram quotes that tell you to keep working, keep hustling, keep pushing through it. What the platitudes neglect to add is that some battles should be abandoned. Sometimes it’s okay not to play your hand and to walk away from the table. There is a difference, albeit subtle, between what’s hard and what’s Sisyphean.

Yes, I want to go back to full-time. Yes, I have no idea how I’ll pay rent this week but I’m surprisingly calm because there are some things out of my control.

  • I’m honestly crying tears of gratitude. I should tell you that I’m not a cryer. Unless it’s those Sarah McLachlan animal shelter commercials and then I’m a puddle. But I’m getting really excited about how this @medium series is coming together. I’ll probably top 50K words including the downloadable resources. And I’m even more humbled that my friend @lorissas (we’ve known one another since 2002 and we’ve worked together since my book publishing days) created these gorgeous custom graphics. I really want my collection branded in the blues and to reflect my vibe as much as possible. I’m spending my own $ to license photography and illustrations.

All because I’m really fucking tired of faux marketers who don’t know of what they teach. Or they teach what has worked for them, their blog or IG, which doesn’t necessarily translate to big brands. Then you have scammers who make it hard for the legit marketers who have to go through hoops because companies have gotten burned by incompetence.
.
I also want to make use of my educational privilege. I went to an excellent private college and Ivy League graduate school. I had the privilege of working for brilliant marketers, from whom I learned everything I know. And I want to share that as much as possible. For free. This is my goal in 2019–create and share tons of pedagogical content. For free.

  • THIS WEEK. Well, let’s see... I wrote a total of 32K words, accepted an offer to be one of a few operating owners of a funded content start-up (no $ now but I think this will blow up), I had another interview with an agency in Philly and we talked money, balance, neuroscience and I like their vibe. I’m not moving cross country just yet so let’s all take a pause. I finished a good book, started another. Got my mammogram results back—no cancer! I got angry with my health insurance company like the rest of America. Part of me hopes I can get a full-time job so I can enjoy a consistent paycheck for a hot second. Celebrated a month off the sauce (let’s not get telenovela about this). I cleaned my house and burst into tears talking to my bankruptcy attorney because apparently no one cares that you’ve been making on-time payments for over a year and you’re going through a rough patch. It stormed and I loved it and prayed for more rain. It’s sunny now. I have a first line for a new chapter but I can’t write because all I’m thinking about is work and how I’ll make rent. But here it is: “Love in their home had become its own form of violence.”

I met up with @bhatmon who always makes me smile and if I move back east she’ll be the one true thing I’ll miss. I listened to podcasts, read science articles, and wished that I could get a neuroscience degree but a kind reader pointed me in the direction of MIT’s free classes so I’m jazzed. I emailed a rescue service and filled out an adoption application but no one ever wrote my back so that made me sad.

I have no idea how I’ll at for anything but I can’t freak out over that which I can’t control and like that. And love is kind of violent if you really get to thinking about it.

I’m annoyed that I’ve lived get for over three years and I haven’t seen nearly enough. And on it goes.
