recipe: pasta with chicken + chive/parsley pesto

gluten-free pasta with chicken and chive/parsley pesto

It’s been a while since I’ve shared a recipe around these parts. In all candor, keeping up a food blog is pretty expensive and my meals as of late have been about what can be repurposed or stretched and what I can afford. I love this dish because it gives me four filling meals (especially with the lentil pasta), there’s an ocean of green on the plate and it’s delicious. Luckily, I live by a farmer’s market where the produce is inexpensive (the herbs were $1.50 each for a huge bunch!) and fresh.

INGREDIENTS
2 cups parsley, chopped
1 cup chives, chopped
1/2 cup pistachios
1 tsp minced garlic
1/2 cup olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 lb chicken breasts chopped into 1/2 inch cubes/strips
1 lb gluten-free pasta (or you can use this delicious lentil pasta)
Optional: 1/2 cup pecorino romano cheese

DIRECTIONS
In a blender (or food processor), blitz the first seven ingredients until smooth and creamy. Set aside.

Cook the pasta per the directions on your box, removing a minute early so the noodles are al dente. Reserve 1/4 cup of the pasta water–you’ll need this to make the sauce super creamy.

In a large non-stick skillet, add 1/2-1 tbsp olive oil, the chicken, salt, and pepper and saute until brown, 5-6 minutes.

Once the pasta is cooked, add it to the skillet along with the pesto. Mix until the chicken and noodles are complete combined. Add the reserved pasta water. Finish off with cheese, if that’s your bag. Enjoy!

  5. This looks really yummy! I know you said that you have been eating what can be repurposed or stretched or what you can afford and I’m sorry that you have been having difficulties. I think everyone will go through something similar at least once in our life’s ( if we are honest), so try and keep thinking positive and keep smiling! Things will get better. Blog posts about repurposing food might be quite helpful to others too.

  12. I’m going to make this. I LOVE pasta, but eating just carbs doesn’t always keep me full. I didn’t know lentil pasta was a thing!

    • Yes! There are lines of lentil and bean pastas that are packed with protein so you’re fuller!

Constructive feedback is a valuable tool, but it doesn’t define you as a person. We will fail. We’ll botch a job or make mistakes. Value comes from learning from the missteps, in creating systems and processes for yourself that reduces the likeliness of that mistake from happening again. Your worth is not the measure of your failures, but how you’ve rebounded from them. How you’ve grown professionally AND personally. It’s about you standing up in the wreckage and saying, okay, let’s keep going.

Your worth is not bound to your work product — it’s defined by all the things that make you, you.

Don’t settle for common or this is how it’s always been done. Small is about the amount of noise you allow in. It’s about making the choices that won’t please the majority of people, but you end up pleasing yourself. It’s the difference between living in a mansion and creating a house that is a home. Fewer, better are words whose meaning has shifted for you. They are words of wealth. And more suddenly feels like a burden.

For those who suffer from depression, meds and therapy simply level the playing field. They elevate you from negative integers to zero. It’s easier to build from zero than from mounting losses. Meds and therapy don’t create shiny, happy people. There are days that are dark and tough and what’s allowed me to function during that time is the concept of living simply and small.

  • In a little over two months, I’ll be taking my first vacation in nearly two years. I can’t tell you how ready I am to board that plane and fall asleep to white wine and engines.
